Remarkable Culinary Experiences in November 2025
November introduces a collection of refined dining experiences across Vietnam. Guests can explore European pork menus crafted with premium ingredients, collaborative Four Hands dinners by Michelin starred chefs, distinctive tasting journeys inspired by lacquer art, and curated menus that celebrate Japanese and Vietnamese harmony. Each experience offers a distinctive perspective on contemporary gastronomy and is designed to appeal to both international visitors and industry partners seeking elevated culinary programming.
European Pork Experience at Madame Lam
In collaboration with the European Pork program, Madame Lam in Ho Chi Minh City presents a four course menu that highlights premium pork from Spain and Portugal. Chef Nhu Cuong designs each dish with a blend of Asian and European sensibilities. The menu features naturally tender and flavorful cuts harmonised with Vietnamese herbs and spices. Highlights include a fresh pork tenderloin salad and the signature European white pork ribs marinated in Kombucha with herb sauce. The experience is available until 14 November at 10 Tran Ngoc Dien in Thu Duc City.
Michelin Star Collaboration at Akuna
The sixth edition of the Mates’ Mash Up series welcomes Chef Thitid Ton Tassanakajohn, a leading figure of modern Thai cuisine, who joins Chef Sam Aisbett at Akuna for a one night only event. Both chefs bring distinctive culinary identities shaped by deep respect for local ingredients and contemporary technique. Guests will enjoy a six course menu with an optional premium wine pairing. The dinner takes place on 15 November from 18:00 to 22:00 at 3C Ton Duc Thang in Ho Chi Minh City.
The Chalet Spirit Four Hands Dinner at The Brix
Inspired by the warmth of the Chalet concept, The Brix presents a seven course collaboration where technique, emotion and fire driven cooking converge. Michelin starred Chef Arnaud Dunand shares the precision of French gastronomy while Chef Phong Nguyen brings the expressive flavours of MediterrAsian cuisine. Together they craft a single evening that blends Alpine influences with Asian refinement. The dinner is scheduled for 19 November from 18:30 to 21:30 at 26 Tran Ngoc Dien in Thu Duc City.
Japanese Vietnamese Harmony at An’s Saigon
An’s Saigon introduces a 13 course tasting experience created by Chef Fumio from Japan and Chef Cuong Nguyen. The menu is designed as a dialogue between Japanese roots and Vietnamese creativity. Chef Fumio’s background spans Jean Georges New York and Jean Georges Tokyo, followed by his independent restaurant No Code which champions sustainability and seasonal tasting menus. The dinner will take place on 21 and 22 November from 18:30 to 23:00 at 5A Tong Huu Dinh in Thu Duc City.
Lacquer Art Inspired Cuisine at La Table Hanoia
La Table Hanoia in Hanoi presents Chapter Zero Wine Dinner, a one night experience that merges fine dining with the artistic language of lacquer craftsmanship. Dishes reflect different stages of the lacquer making process, including a highlight course featuring Patagonian toothfish symbolising the refined technique of egg shell inlay. The dinner is paired with wines from Marqués de Casa Concha, a Chilean heritage label dating back more than three centuries. The event takes place on 13 November from 18:00 to 21:00 at the Press Club on Ly Dao Thanh Street.
